Instant Pot Anti-Inflammatory Yellow Rice
Not only does this delicious yellow rice pair well with almost everything, but it's also naturally anti-inflammatory. BONUS: It can be made in the instant pot, yielding perfect results everytime.

Ingredients
- 1 cup brown rice, uncooked
- 2 Tbsp olive oil
- 3 Tbsp yellow onion, minced
- 1 Tbsp garlic, minced
- ¼ tsp turmeric
- ¼ tsp sea salt
- 7-10 turns black pepper
- 2 cups chicken broth
Instructions
- Set instant pot to saute and add olive oil.
- Next, add onions and cook until translucent, about 3 minutes.
- Add garlic, turmeric, salt and pepper. Cook until fragrant.
- Next, add rinsed rice and cook until fragrant, stirring often. 3-5 minutes.
- Add chicken broth and stir to combine.
- Place lid on Instant Pot and set valve to sealing.
- Change to manual pressure and cook for 25 minutes.
- Allow to natural pressure release completely. Remove lid and fluff with a fork.
