Instant Pot Anti-Inflammatory Yellow Rice
Not only does this delicious yellow rice pair well with almost everything, but it's also naturally anti-inflammatory. BONUS: It can be made in the instant pot, yielding perfect results everytime.

- 1 cup brown rice, uncooked
- 2 Tbsp olive oil
- 3 Tbsp yellow onion, minced
- 1 Tbsp garlic, minced
- ¼ tsp turmeric
- ¼ tsp sea salt
- 7-10 turns black pepper
- 2 cups chicken broth
Set instant pot to saute and add olive oil.
Next, add onions and cook until translucent, about 3 minutes.
Add garlic, turmeric, salt and pepper. Cook until fragrant.
Next, add rinsed rice and cook until fragrant, stirring often. 3-5 minutes.
Add chicken broth and stir to combine.
Place lid on Instant Pot and set valve to sealing.
Change to manual pressure and cook for 25 minutes.
Allow to natural pressure release completely. Remove lid and fluff with a fork.
