Instant Pot Anti-Inflammatory Yellow Rice

Not only does this delicious yellow rice pair well with almost everything, but it's also naturally anti-inflammatory. BONUS: It can be made in the instant pot, yielding perfect results everytime.

Ingredients

  • 1 cup brown rice, uncooked
  • 2 Tbsp olive oil
  • 3 Tbsp yellow onion, minced
  • 1 Tbsp garlic, minced
  • ¼ tsp turmeric
  • ¼ tsp sea salt
  • 7-10 turns black pepper
  • 2 cups chicken broth

Instructions

  • Set instant pot to saute and add olive oil.
  • Next, add onions and cook until translucent, about 3 minutes.
  • Add garlic, turmeric, salt and pepper. Cook until fragrant.
  • Next, add rinsed rice and cook until fragrant, stirring often. 3-5 minutes.
  • Add chicken broth and stir to combine.
  • Place lid on Instant Pot and set valve to sealing.
  • Change to manual pressure and cook for 25 minutes.
  • Allow to natural pressure release completely. Remove lid and fluff with a fork.
